Superbowl Food

As we come into the football playoff  we want to be ready with everyone's favorite football foods!  Wings, Buffalo Chicken Sandwiches, Pizza, Beer Nuggets and Fried Cheese Sticks.  We will be working on separate techniques for similar dishes to compare flavor, texture and presentation results.

American Cuisines

Latin American Foods

This week the students are discovering ingredients and flavor blends from the Latin Americas.  They are exploring Mexico, Ecuador, Columbia, Peru, Chile, Brazil, Trinidad, Puerto Rico, Cuba and Jamaica.  They are finishing their week by participating and cooking with Taxco Restaurant for the Cinco de Mayo festival in Sycamore on Sunday!

European Cuisines

This week we start putting together all of our techniques while we learn about different culture's cuisines.  We will explore French, Italian, Irish, Russian, Scandinavian, German, and Dutch dishes.

The Culinary Arts I students are starting a month long project to design their own restaurant menu.  We are also discussing the different types of diets and dietary guidelines that a culinary profession may need to design a menu for.

The students will learn the history and specifics of beverages like coffee, tea, soda and bottled water.  They will then spend time using flavors from coffees and teas to create culinary dishes.

For the next three weeks we will begin the process of discovering a variety of meats.  We will learn the different cuts of meats and the cooking style used to cook each style.

This week we explore the history of chocolate and it's many uses.  In our labs we will be making chocolate cookies, ganache, lava cakes, truffles, beignets and more!

For the next couple of weeks we will be discovering the science of cooking vegetables, legumes and lentils, seeds and nuts, and fruits.

We are studying everything from the history of milk consumption, dairy farming and then using a vairety of dairy items to create dishes.  Students will be creating Cream of Broccoli Soup, Panna Cotta, Caramel Pie, Shirkhand, Yogurt Cheese, Butter, Creme Fraiche, Whipped Cream, Creme Brulee, and Mac & Cheese.  We will finish the week with a cheese tasting.
