CAII Cake Contest

Our second year students were given a basic butter cake recipe and American buttercream icing recipe.  They were asked to take these and improve them with their own gourmet designs.  For the presentation the studens were require to bake two 8" round cakes then split them and fill them so there are four layers of cake and three layers of filling.  They then had to do a crumb coat and base coate on the outside.  For the final part of the presentation the cakes were to be scored for 10 servings with a rosette on each serving.  Students were then told they could add any other decorations to match the flavor palette they created.  Here is what they presented:
#1 Cherita Turner: White Butter Cake filled with alternate layers of Blueberry Compote and Strawberry Compote then topped with a Vanilla Buttercream.  #2 Roberto Penaran: White Butter Cake filled with a Caramel Buttercream accented with Red Lava Salt. #2 Destiny Johnson: Pumpkin Spiced Cake filled with a Mace Spice Buttercream. #3 Donavon Burlney: White Butter Cake soaked with Strawberry Sauce, filled with Vanilla Buttercream and topped with Strawberry Glaze. #4 Greg Lumzy: White Butter Cake filled with Vanilla Buttercream and covered with Antique Coaba Cocoa Buttercream.  #4 Michael Coombs: White Butter Cake filled with Vanilla Buttercream and topped with an assortment of M&M candies and Kit Kat candies.
